Recipe Baba Ganoush. This weekend, we celebrate the 45th Birthday of the UAE. In honor of their birthday, here’s a very popular dish in Abu Dhabi, Dubai and the other Emirates: Baba Ganoush brought to you by Basmaty.
Baba Ghanoush is a traditional Middle Eastern eggplant dip. The eggplants are usually grilled on a barbecue which gives this dish a delicious smoky flavour, but you can also roast them in the oven. This refreshing dip is perfect to serve as appetizer with Lebanese bread or as a side sauce with grilled meat or chicken.
Recipe Baba Ganoush

Ingredients
- 500 g (1 pound) eggplants
- 3 tbsp tahini (sesame paste)
- 1 red bell pepper, finely chopped
- 1 green bell pepper, finely chopped
- 3 green onions, finely chopped
- 2 tbsp flat parsley, finely chopped
- 2 tbsp lemon juice
- 1 tbsp pomegranate molasses
- 2 tbsp walnuts, finely chopped
- 2 garlic cloves, crushed
- White pepper to taste
- Salt to taste
For garnish
- 1 tbsp pomegranate molasses
- 1 tbsp chopped walnuts
- Olive oil
Directions
- Prick the eggplant with a fork, place them on a baking dish and bake for 45 minutes in at preheated oven at 220°C. or 430°F.
- Peel the skin off the eggplants as soon as they come out of the oven, transfer to a sieve to cool and drain. Place a bowl under and chill in the refrigerator.
- Once cool, finely chop the eggplants with a knife.
- Stir in the red and green peppers, onions, parsley, garlic, tahini, salt, pepper, walnuts, lemon juice and mix until well combined.
- Drizzle some olive oil on top and garnish pomegranate molasses and walnuts.
Tip: If you want to keep the baba ghanoush for several days, fry the garlic and onions in a little olive oil.
